Organic products from small Danish farmers and producers, animal friendliness and sustainability are the building blocks of this restaurant. Just like sister restaurant Format, the dishes are simple, but full of flavour. Such as steamed lemon sole with salad, oyster emulsion and smoked sauce, Danish lamb with sorrel, spinach puree, anchovies and lime sauce or new potatoes with an emulsion of lovage, pine nuts and Beaufort cheese.
