Tabuchi Yakuzen Kenkyusho
Kyoto is one of the world's great culinary destinations, yet beyond its celebrated kaiseki restaurants, a number of chefs continue to explore highly personal culinary paths. Tabuchi Yakuzen Research Institute is one of the most intriguing examples. Established in 2025 by Chef Akihito Tabuchi, a certified International Yakuzen Food Educator, the restaurant occupies the second floor of a renovated traditional Kyoto townhouse. Formerly the owner-chef of LUDENS on the ground floor, Chef Tabuchi created the research institute to explore more deeply the relationship between cuisine, health and traditional medicinal food culture. His philosophy is based on yakuzen, the East Asian tradition of food-based preventive medicine, with roots in classical Chinese dietary therapy. His approach is clear: deliciousness and health should not be opposing values. Each menu is therefore constructed with both flavour and wellbeing in mind, creating a dining experience that is highly distinctive and deeply connected to Japanese food culture. Vegetables play a central role, with many sourced from the farming communities of Ohara, an area known for its traditional Kyoto vegetables. Although ingredients such as chicken broth and soft-shelled turtle feature in the regular menus, a fully pure plant tasting menu can be prepared with advance notice.
