Substans is beautifully located in Aarhus! It is clear that the sea is a major source of inspiration for chef-owner René Mammen. Vegetables are always present, though a 100% pure plant offer is still rather rare. Nevertheless, garden ingredients are always seasonal and full of flavor. Just as important is the warm, familial atmosphere, with genuine respect for the guests. At We’re Smart, we are happy to welcome Substans into the movement, as we believe the chef and his team already have a strong connection with vegetables and can bring them even more to the forefront.
