La Table de Climats

Dijon has a strong gastronomic reputation, and Chef Alexandre Clochet Rousselet intends to uphold it with his restaurant Table des Climats. Beyond the exceptional wine list — home to more than 800 Burgundy wines — there is a strong focus on local products in their proper season. The cuisine is traditional and regional, with vegetables given a delicious place on the plate. With “Climats” in its name, perhaps it would also make sense to give meat a less prominent role, Chef?
