In the middle of the countryside, not far from Copenhagen, lies the restaurant Den Røde Cottage. Chef Simon Lerche plays with the local produce like an experienced violinist. Vegetables are pickled, dried, acidified, marinated, and preserved. Yet they remain more as garnish in his beautiful dishes. Isn't there more to do with them, chief? We remain fans of this dynamic team, because chefs who have their feet firmly planted in nature take root after a while, so we are looking forward to "the next step".
