In a protected modernist building from 1937 Nathan Urbanowiez presents the Nikkei kitchen, a fusion of Japanese and Peruvian food culture, which originated in Peru. The preparations are captivating dishes with dazzling flavours, textures and surprising combinations. Vegetables, however, are used sparingly, which is a pity.
