Chef follows his own path at Coquum. This culinary Viking cooks either with a sharp Nordic style or with a highly creative Belgian touch. The flavors are always spot on, and vegetables play a central role – sometimes as fully plant-based creations, sometimes as a complement to meat or fish. What stands out most is the effortless flow of the dining experience, the chef’s approachable personality, and the flavorful dishes he serves. Since Chef Dassonville runs the kitchen alone, it is not yet possible to offer a fully plant-based menu every day. But we keep our fingers crossed, because this chef truly has the skills. One thing is certain: Coquum is a name we’ll be hearing a lot more in the years to come!
