Chef Fernando Tommaso Forino follows a “No Rules” philosophy, adapting the menu to the wishes of his guests. We asked for a fully Pure Plant menu, and our wishes were met with enthusiasm. The creativity in the Pure Plant menu was truly impressive. We were surprised by one exceptional dish after another, with imagination seemingly without limits. Regional ingredients, innovation and recognisable flavours were constantly reinvented, while still maintaining a clear connection to the roots of this beautiful wine region. Would we come back when we’re in the area? Absolutely, without a doubt! It’s also worth knowing that you can stay overnight here, and that there is a second, more casual bistro called The Lab. This confirms that Chef Forino brings his own vision even to traditional dishes from the Alba region, showing that simplicity can be just as inspiring. A well-deserved 4 Radishes, Chef!
