La Sibilla

In the spectacular setting of the city of Tivoli, stands a truly unique restaurant: La Sibilla. Founded in 1720 on the Tiburtine acropolis, the restaurant boasts an extraordinary history and a setting unlike any other in the world. From its magnificent garden, guests can admire Villa Gregoriana with its spectacular waterfalls, a breathtaking papal villa, and two splendid Roman temples—one of which is located right inside the restaurant’s garden. Adding to the charm is a centuries-old wisteria that creates an atmosphere of timeless beauty. The cuisine is distinguished by a wide range of pure plant options, all masterfully prepared and enriched with fresh, seasonal, and locally sourced vegetables. Yet La Sibilla is more than just a restaurant: over the centuries it has welcomed kings, queens, and distinguished figures from all over the world. Among the many illustrious names who have celebrated here are Pope Leo XII, Frederick William III King of Prussia, Prince Jérôme Bonaparte, Gabriele D’Annunzio, Emperor Hirohito of Japan, Princess Margaret of England, Yoko Ono, and even Neil Armstrong, the first man to walk on the Moon. Today, just as in the past, the restaurant continues to attract international personalities and visitors from every corner of the globe, captivated by an experience that blends history, landscape, and gastronomy.
