La Manduca de Azagra - Asador

La Manduca originated in Azagra, a village in Navarra, and moved to Madrid without losing its roots. Juan Miguel Sola prepares authentic dishes from the cuisine of Navarra and is renowned for its extraordinary vegetables that still come from the family vegetable garden in Azagra. Within particular artichoke, cardoon, white asparagus and the famous "cristal" peppers (pimientos del cristal), he merely peeled and grilled on charcoal on the plate.
