Hansom
Seasonal tasting-led restaurant with a strong emphasis on provenance, local sourcing and ingredient storytelling. The menu demonstrates visible seasonality through new-season produce, broad use of vegetables, herbs and foraged ingredients integrated throughout the guest journey rather than treated as side components. Plant ingredients feature across multiple courses with evidence of culinary craft, preservation techniques, flavour layering and regional identity. Strong narrative around suppliers, local produce and whole ingredient utilisation. An impressive dining experience demonstrating a thoughtful pure plant mindset and strong culinary intelligence. What makes this even more remarkable is that the restaurant is operated by one chef and a part time assistant, delivering a level of consistency, creativity and technical execution that feels far beyond the size of the team. The menu showed a clear understanding of ingredients and modern techniques, using plant-led alternatives to build flavour, texture and depth rather than relying on traditional dairy components. There was visible seasonality, provenance, storytelling and a genuine respect for ingredients throughout the guest journey & local community. Chef Ruth Hansom demonstrates considerable talent, combining technical ability with a natural understanding of flavour, balance & texture. Most importantly, the experience felt authentic and memorable.
