De Groene Lantaarn
Jarno Eggen uses the produce from his own garden, supplemented with products from the neighbourhood for his inventive, light dishes. Primer vegetables, special herbs and local mushrooms such as porcini mushrooms and chanterelles play a major role. For his garden he uses non-manipulated primal seeds because they produce much healthier fruits. His menus are available in both a vegetarian and a non-vegetarian version. In the vegetarian Menu Floraal we find dishes such as peppers stuffed with potato salad, goat cheese and basil; rice paper and vegetables with wakame and oriental marinade and kohlrabi, stuffed and au gratin, with small ravioli filled with Parmesan cheese and balsamic vinegar.
