Couvert de Vignes

There are culinary islands to be found in the middle of the Champagne region. One of them is definitely Covert de Vignes by chef Benjamin Gilles in Chigny-les-Roses, not far from the Champagne house Canard-Duchêne. All courses are full of vegetable ingredients, are the flavour and colour enhancers, but are not always in the majority.
