Chef Gijs Koopman is open to bringing more plant-based dishes onto the menu, though he acknowledges it’s a learning process. We tried the existing pure plant options and felt they could still benefit from some further refinement. The restaurant is beautifully integrated into a stunning Pillows Hotel in Zwolle – yes, right in De Librije town. It serves as both the breakfast area and as a restaurant for lunch and dinner. With the city center just a short walk away, there’s every reason to plan a stop here.
