Chef Mélanie Englebin has firmly established her restaurant, Cécila, within Hotel Villa Monceau. We have followed her journey for quite some time, and it is a pleasure to see her flourish in this setting—something that clearly shines through on every plate. Her pure plant menu, Exploration Végétale, is a captivating culinary experience that deserves to be discovered. Thoughtfully composed around local, seasonal vegetables, vibrant fresh herbs, and delicate edible flowers, each dish celebrates the purity and integrity of its ingredients. There is a refined, feminine elegance to the cuisine that enhances the natural character of every element, making the restaurant truly distinctive. During our most recent visit, we were particularly impressed by the remarkable evolution of her pure plant creations. The dishes show greater depth, precision, and creativity than ever before. This impressive progress has earned the restaurant an additional Radish and propelled it to the highest level in the We’re Smart Green Guide. Bravo, Mélanie—this achievement is richly deserved.
