Chef-owner James Sherwin has made a dedicated Pure Plant menu a permanent part of the restaurant's offering. Day-to-day operations in the kitchen are led by Chef Alex Norcop, who shares the same vision and is an enthusiastic forager, bringing the flavours of the surrounding countryside directly to the plate. The entire project is driven by an ambitious sustainability philosophy.
