Chef Kazuya Iguchi knows exactly how to make vegetables shine — his time with legendary vegetable chef Michel Bras certainly contributed to that. Fermentation holds no secrets for him, and at the counter you can watch all the kitchen activity unfold, creating a warm and interactive atmosphere with the team. There is one fixed menu, which includes meat and fish alongside many seasonal vegetables. A pity the chef does not (yet) offer a 100% pure plant menu — we are convinced it would be a fantastic experience.
