Terroir Aitoibukuro
Terroir Ai to Ibukuro may not be the most radical or innovative restaurant among the destinations featured in the Green Guide, but it is a compelling example of how sustainability can be deeply rooted in contemporary Japanese gastronomy. Located in Hokuto City, Yamanashi Prefecture, the restaurant is surrounded by rural landscapes, agricultural land and the mountains of Yatsugatake and the Southern Alps. The restaurant occupies a beautifully renovated farmhouse more than a century old, creating an immediate connection with the land and local heritage. Owner-chef Shinsaku Suzuki, who opened the restaurant with his wife Emi Ishida in 2017, places vegetables from nearby farms at the heart of his cuisine. They are complemented by local game and other seasonal ingredients, creating a vegetable-forward menu that reflects the region's agricultural traditions without excluding animal products. Chef Suzuki's background in Japanese cuisine, followed by experience in French gastronomy, is reflected in his precise and restrained cooking style.
