The Spanish Roof is a fixed value at the Zoete Waters of Oud-Heverlee. The originally 14th century building underwent numerous renovations in the course of its existence. Now it has a very contemporary sleek, warm and designful interior. Jonathan Uytendaele took over the kitchen from his father, his brother Kristof takes care of the service and the choice of wine. Jonathan makes balanced preparations with pure and rich flavors. Vegetables are everywhere but play a more supporting role. Except in the vegetarian preparations that are present in the first and main dishes, such as in a preparation of burrata, tomato, basil, balsamic vinegar and yoghurt.
