Seizan Ryokusui
Nestled in the remote mountains of Oku-Tadami and Oku-Oze in Niigata Prefecture, Seizan Ryokusui celebrates one of Japan's most pristine natural environments. Open only from spring to autumn due to heavy winter snowfall, the restaurant has made seasonality the foundation of its philosophy. Its Primeval Cuisine is inspired by the surrounding ecosystem, featuring grains, mountain vegetables, wild plants, mushrooms and locally grown produce. A carefully crafted Pure Plant tasting menu highlights the richness of the region's botanical heritage, while the signature Jomon Soup, made solely from vegetables, wild plants and salt, beautifully expresses the restaurant's respect for nature. Chef Takuhiro Aoyagi combines Japanese traditions with contemporary techniques, sourcing almost all ingredients within thirty kilometres of the restaurant. As part of the Oze Jujo project, Seizan Ryokusui offers far more than a meal—it is an authentic expression of landscape, culture and the remarkable potential of vegetable-driven cuisine.
