Ottolenghi has become a true icon of Mediterranean cuisine, celebrated worldwide for placing vegetables at the heart of the dining experience. It is only fitting that the Mandarin Oriental Geneva has brought this philosophy to its international clientele. While Yotam Ottolenghi is not personally present in the kitchen, Chef Maxime Martin—trained by the master himself—faithfully translates his culinary vision into every service. Vegetables are undoubtedly the stars of the menu, although fish and meat also feature prominently, ensuring there is something for every guest. For the We're Smart® Green Guide, it is inspiring to see such a strong plant-forward approach in a luxury hotel setting. The only point for further reflection is the use of dairy in dishes presented as Pure Plant. Eliminating those final dairy elements would elevate the concept even further and align it more closely with the full Pure Plant philosophy.
