Nôtori
Located at the foot of Mt. Fuji, Nôtori is the restaurant of chef Kohei Horiuchi and his brother, sommelier Shigeichiro Horiuchi. Inspired by the landscape and traditions of the northern foothills of Mt. Fuji, their philosophy of "Fuji Hokuroku Cuisine" celebrates harmony with nature and a strong sense of place. Particularly noteworthy for the We're Smart Green Guide is the restaurant's dedicated Pure Plant tasting menu—still a rarity at this level in Japan. The cuisine is elegant and restrained, allowing local vegetables and seasonal ingredients to express the character of the region with remarkable clarity. After training in Tokyo and at La Grenouillère in France, Chef Kohei combines refined French techniques with a distinctly Japanese sensitivity.
