L’Oustau Baumanière is a true monument — there’s no doubt about that. Culinary history simply hangs in the air here.
Chefs Glenn Viel and Brendan Dehan are more than ever at the helm of this 5 Radishes restaurant, and they just can’t help but keep pushing creatively toward the next level of pure plant-based cuisine — which, of course, makes us very happy. We’re Smart has been following the restaurant closely for many years and remains a big supporter of the warm atmosphere and high-quality vibes that define this place.

We also never forget that under chef-owner Jean-André Charial, the restaurant was one of the very first fine dining establishments in the world to offer a dedicated vegetable menu — the “Potager” — alongside its traditional menu, as early as 1987. The vegetable gardens here are also one of a kind — in everything they do, they strive to be the best, and they still are in France. The big question now is: what will happen when the current owners take a step back? We’ll see when the time comes. In the meantime, it’s pure joy to experience it all.
