Chef Shohei Mori is happy to be back in his home-town where he is closer to nature. The training programme was interesting: Taillevent Paris and Pierre Gagnaire Tokyo. Vegetables are very important but are mainly brought with meat and fish. So there is still growth potential here. What about a 100% pure plant menu chef?
