L’Envie

David Grosdent cooks dishes with pure flavors, beautiful crisp accents and plenty of balance. He is creative with vegetables but uses them sparingly. He serves veal sweetbreads with green lentils, lettuce and lardo di colonnata. And with veal from the Limousin he gives cima di rapa, young garlic and Roscoff onion.
