Copenhague
This restaurant, on the first floor of the Danish House, is the only one with a Michelin star on the prestigious Champs Elysees. The name leaves no doubt about the type of cuisine that is served here. Andreas Møller, a young chef who worked in well-known Danish restaurants and is an ambassador for the “New Nordic Food”, runs the restaurant. His kitchen revolves around seasonal products that he processes with a lot of imagination. Vegetables are present everywhere, such as in a combination of brill, apple and celery; in a preparation of veal sweetbreads with Jerusalem artichokes, onions and in a four-course menu that revolves entirely around vegetables.
