Chef Tom Gorringe has the honor of leading the rather classical cuisine of the renowned Aria restaurant in Sydney. Not a task for just anyone – the bar is set high, and the food must impress every guest equally. With its 25th anniversary now behind it, Aria looks forward to a long and bright future. That future clearly lies in increasing the number and percentage of plant-based ingredients on the menu. A word of advice: with the unique view of the Opera House, you’ll want to make sure to book well in advance!
