Wild Atelier
Chef Jonathan Zandbergen, formerly head chef at Merlet in Schoorl, joined forces with De Echoput, a true classic and legend in Dutch gastronomy. Wildatelier means “workshop of game”, a term traditionally associated with wild animals such as boar, rabbit and deer. Chef Jonathan believes that foraging and working with seasonal vegetables are equally part of this wild universe. This intimate restaurant, located in the middle of a national park, seats just 20–30 guests. The service is personal and warm, with chefs and maître d’ preparing elements of the dishes right in front of you. The dishes are elegant and beautifully composed. Sustainable fish and game feature in the surprise menu, but you can request a vegetarian version when making your reservation. You’ll be surprised by the incredible wealth of ingredients that can be found in the wild. The restaurant is off to a great start, and we’ll certainly be back when a full 100% Pure Plant menu is available.
