Victor Martin and his wife Noemi opened their restaurant in 2007. From the beginning, they worked with the freshest produce from Castilla y Leon that Victor brings to the plate in rich dishes with swirling textures and with a great deal of technical knowledge. Vegetables play a supporting role. About ten years later, in 2018, his craftsmanship was awarded a first Michelin star.
