Patron Cuisinier Dennis Middeldorp is a fervent supporter of Dutch Cuisine! We like to hear that. The 80/20 vegetable rule, the right seasons, organic if possible, respect for our planet and with love for regional products. But the theory does not always match practice, as it turns out. There are vegetables, but certainly not in an 80% ratio. The supply of 100% vegetable products is also very limited. It does not make perfect sense chef!
