Vegetables play the leading role, especially seasonal vegetables and preferably from the neighbourhood! These products are not only fresh and therefore tasty but also bear the local identity and history and are therefore a source of inspiration. We look for fascinating combinations with foreign kitchens and old preparation methods such as fermentation.
