Some time ago, Philippe Fauchet was mainly inspired by exotic spices and delicate herbs and aromatics. Today, he prioritises the production of small artisanal farmers from the region in his kitchen. The combination of that local character and a large dose of creativity appeals, so much so that the sympathetic chef has gained a large following among gastronomes.
