Chefs Johan Backéus and Birgit Malmcrona know what they want. They work in a closed loop in collaboration with their local producers. Game picking is also on the agenda, all this to bring a sober cuisine, to the point, with a focus on product quality. You can best describe this cuisine as nordic with Japanese influences. Vegetables certainly play a role, but not (yet) a leading role.
