After having gained experience in Paris, Italy and the famous Spanish restaurant El Cellar de Can Roca, the Peruvian chef Jaime Pesaque came back to Lima to open Mayta in 2010. By now, he runs 6 restaurants in Uruguay, Peru, Dubai and the USA. His dishes contain the right balance between vegetable & animal ingredients. Vegetables get an important role, but it is a simple kitchen where Peruvian ingredients come into their own.
