At Learta, Chef Manu Lachica manages to strike a fine balance between plant, sea, and land. Still, we have some doubts as to whether the restaurant is yet ready for a place in the We’re Smart Green Guide. With this message, we’d like to encourage the chef to increase the offering of pure plant dishes – the region has so many wonderful ingredients that fit beautifully into a mostly traditional southern Spanish cuisine.
