Klavertje Vier

As a student kook Rieno Bos was already fascinated by the many possibilities of vegetables. Now, in his own restaurant, which he has been working with Laura van Putten for more than 10 years, he has grown a part of the vegetables, herbs and flowers, supplemented with products from the village garden of Nunspeet. You will eat a salad of lamb shoulder, potato, onion, quail egg and apple; layers of eggplant and Parmesan cheese with fennel and chickpea cream or spring roll with endive, paprika, black garlic, cucumber and radish.
