Ana Ros is guided by the natural wealth of her region and the community of collectors, shepherds, cheese makers, hunters and fishermen and other local producers around her restaurant. With vegetables from her own garden, she tries to be self-sufficient. She fills shortages with what local farmers grow and serves her dishes with very expressive, intense flavours and aromas, very balanced but always full of surprising nuances.
