Chef Peter Gast experiments in his unique restaurant Graphite with vegetable days, even completely vegan. And yes, people are wild about it. So with this one, we want to give the chef a push to take the step towards an all plant-based offering. Why not? Amsterdam is a big city with many convinced vegetable fans, not to mention the international crowd who visit this beautiful city. I would not hesitate Peter!
