De Kop van't land
Hotel-restaurant Kop van het Land is situated on the edge of the Dordtse polders and the National Park De Bieschbosch and has a much-acclaimed vegetarian restaurant. Chef Gijs Kemmeren makes every week a biological surprise menu of 3 to 6 courses with beautiful flavour compositions. It contains dishes such as a cauliflower salad with crème fraîche, dressing of arugula and grapefruit or a combination of scalded leeks with cream of celeriac, oyster mushrooms, smoked whey sauce, parsley oil, puffed mustard seeds, kohlrabi, purslane and fennel.
