Guests are happy to give themselves to the evening-filling spectacle of chef Floris Versluijs. Eight small courses and matching wines are enthusiastically explained at the table. A complete vegetarian menu is also possible, as is a fresh juices arrangement instead of wine. In the Floris kitchen, vegetables and fruit remain pure or transform into sorbet, foam or brine. The leaves, seeds, peelings and roots are also processed.
