Chef Paco Ruano worked in restaurants Mugaritz and El Celler de Can Roca in Spain and Noma in Denmark before starting Alcalde in 2013. His cuisine is simple and pure based on local ingredients with which he creates striking combinations, with varying textures and dazzling flavours. And to top it all off, a thoughtful use of vegetable elements.
