BUUT is a modern and sustainable brasserie located in the heart of the Utrechtse Heuvelrug. You can expect warm service and an affordable culinary dining experience in our monumental church building. We are passionate about serving refined food with an honest origin. Our goal is to surprise many with a balance between a wide range of vegetarian creations and some local meat & seafood. Behind the scenes we try to minimalize our impact on the environment by implementing more than 30 integrated sustainable actions.   All these practical conscious choices lead to increase sustainable business operations without standing in the way of a refined cuisine. The ambitious kitchen team, led by Matthijs Pijpers, works with products from the ‘Utrechtse Heuvelrug’ or at least from Dutch soil. Under the motto ‘by far the best from nearby’, we work every day to make our business activities more sustainable while serving delicious food.

 

MENU, local & seasonal

BUUT serves a compact a la carte menu and a Chefs Menu featuring mainly creative veggie dishes, some local meat and seafood from Zeeland and the North Sea. The majority of our ingredients (±80%) is local. The seasons and our local suppliers are the inspiration for the changing menu. We spread their story and it is created by using cooking techniques such as pickling, fermenting, preserving, roasting and smoking. 60% of our  menu is called ‘plant & land’ while the other 40% is named ‘meat & sea’.
