Paul de Pierre

In the garden of his restaurant, Paul Henri cultivates 68 different types of fruit and vegetables in a 100% natural and organic way. The other vegetables come from farmers with whom he cooperates closely. His chef Fabian Bali combines them in dishes such as hake with buttermilk, asparagus, spinach sprouts and lemon thyme. Unfortunately too much as a garnish.
