Floris Vriens has a strong philosophy of locality and strives to source all his produce from within a 15km radius of his restaurant. His dishes are largely botanical, sourced from his own kitchen garden, from the wild and sometimes from growers and cultivators nearby. The 14-course tasting menu takes you on a tasty trip to experience Zeeland and all the riches the peninsula has to offer. The menu is focussed on vegetables, with the occasional addition of ethically sourced meat or fish. Pre-ordering the vegetarian menu will not leave you disappointed though. The vegetable alternatives are surprising and skillfully executed. Beautiful!
