Chef Dennis Willems is totally We're Smart with his seasonal cuisine based on regional top products such as asparagus, wild garlic, rhubarb, ... and of course morel mushrooms in season! Completely vegetarian, no, because other regional products also have their place, such as Oosterschelde lobster, mackerel and lamb. But the 80/20 rule of Dutch Cuisine is respected! Beautiful.
