Chef Mituwa Shingo follows eight principles at his restaurant Mitsuwa: the seasons, freshness & locality, purity, deliciousness, regional traditions, surprise & stimulation, letting aromas speak for themselves, and a happy team. Respect, chef! At We’re Smart, we are very positive about the beautiful dishes, which excel in freshness and flavor. Vegetables certainly take center stage, though a 100% pure plant menu is not yet part of the offering. Still, it wouldn’t be difficult to take that final step and keep the door open for all who would love it!
