Chef Bjorn Massop goes above and beyond to find the best ingredients from local farmers and focusses on sustainability by reducing food waste to a minimum and following the seasons. Any vegetable residues are transformed into compost or processed into food for their pigs. Lokaal offers also a vegetarian menu, showcasing several surprising cooking techniques such as the dry-aging of beetroots.
