Restaurant LOCALS stands for local products and local people. The chef, Rafael Surie, and his team, delights working with vegetables. They strive to create high-quality dishes in which ingredients from Dutch soil take centre stage. With their own Vertical Farm and locally sourced products, they show the best of what the Netherlands has to offer — presented in a surprising, sustainable and playful interpretation of classic cuisine.
