Le Florimond

Pascal Guillaumin is a special case. When he started his restaurant he immediately started with a solid terroir kitchen, rooted in the Limousin, his region of origin. His favorite dish is a stuffed cabbage according to the recipe of his grandmother. At the request of his customers and with attention to health and sustainability, he now brings his creativity into dishes that focus on fruit and vegetables of the season.
