Chef Alessandro Proietti Refrigeri is a culinary painter. Everything is brought to the highest standard in style. Top-notch restaurant, but as far as we are concerned, vegetables across the board may be even more strongly in charge. With the philosophy that everything should come locally from within the 3km circle, it is not difficult to give vegetables & co a starring role. The large vegetable dish that evolves with the seasons is a great example of this!
