Hostellerie Lafarques
Olivier Tucki is a new chef here but not a stranger in the region. A great asset for this institution of the Province of Liege which is - always - the superb Hostellerie Lafarques. Olivier Tucki is certainly one of the best chefs in Wallonia. In any case, this was demonstrated to us again by a recent visit. Its beautiful Lafarques Hostellerie table is sublimated by dishes of perfect flavours and subtly creative presentation. The top quality products come from the regions where they are most impeccable. From here, just next door, like a pigeon from the Ferme de Sohan cooked rosé and married to spinach shoots, fried foie gras, blackcurrant and Pinot Noir sauce. Moreover, like these memorable scallops, small white ones from the bay of Saint-Brieuc, snacked and placed on a vegetable soil with cauliflower mellowness, cuttlefish ink tile, virgin spring onion sauce and bergamot. A famous treat that, throughout the meal, makes a thousand and one little ones!
